May have found an answer to this.
Although the information I found for the METRA 70-7903 connection standard indicates that the Green and Brown wires (located on pins 1K & !M respectivel) are UART1 & 2 which would imply a serial comm's interface it seems like Mazda are using them for a more basic method of passing car related data to the head. Simply connecting them to switches. This is not surprising due to the low level of integration of the head unit with the car, I don't think the screen ever displays car related information such as heater controls.
So far I've seen the following
Green connects to handbrake - Presumably so that DVD capable units will only display video when car is stationary.
Brown connects to Reverse light - I'm guessing this would be to turn on a rear view camera, not sure if any MX-5 came with this so not sure why it is in the loom.
Obviously I'll be checking these for their function and signals (switched live or ground) and I'll feed back here.
